Cucumber, Tomato & Red Onion Salad The chefs at Jiko – The Cooking Place at Disney’s Animal Kingdom Lodge masterfully present flavors of traditional African, Indian and Mediterranean cuisines.  The stellar wine list features one of the largest selections of South African vintages in North America. Cucumber, Tomato & Red Onion Salad Serves 4 1 English cucumber 1/2 teaspoon coarse salt 1/2 of a red onion, very thinly sliced 2 tomatoes, cubed 1/4 pound arugula Coarse salt and freshly ground pepper to taste Vanilla dressing: 1/2 cup white balsamic vinegar 1/2 tablespoon vanilla extract 1/4 cup extra-virgin olive oil Coarse salt and freshly ground black pepper to taste Melon vinaigrette: 1/4 cup cantaloupe juice 6 tablespoons watermelon juice Pinch each of coarse salt and freshly ground black pepper 1/4 cup fresh lemon juice 1/2 cup extra-virgin olive oil 1/4 cup cottage cheese 1/2 tablespoon freshly sliced basil leaves 1 . For the vanilla dressing, whisk all ingredients together and adjust seasonings to taste; set aside. 2 . For the melon vinaigrette, combine juices with salt and pepper. Whisk in 1/2 cup olive oil and adjust seasonings as needed; set aside. When ready to serve, mix in cottage cheese and basil. 3. Cut cucumber in half, seed and finely slice. Place slices in a stainless-steel bowl. Add 1/2 teaspoon coarse salt. Mix well and let sit for 30 minutes at room temperature. Drain water from cucumber and then mix cucumber with the onions and tomatoes. Add 1/4 cup of the vanilla dressing. Season with salt and pepper to taste. 4. Toss arugula with 2 tablespoons of the vanilla dressing, reserving remaining dressing for another use. 5. In the center of a large plate, mound the tomato, cucumber and onion mixture. Drizzle 2 tablespoons for more to taste of the melon vinaigrette around the mound. Top with dressed arugula. Recipe notes: Both dressings can be made a day in advance and refrigerated. In the vanilla dressing, you can substitute malt or cider vinegar for the white balsamic vinegar. DO NOT use a dark or red balsamic vinegar.

Disney contest to give winner $10,000 to pursue longtime dream

Disney Online’s new web channel, GetHatched.com, is sponsoring a contest to help fulfill one winner’s longtime goal by giving away $10,000. Contestants enter the Take A Chance – Make a Change Contest by registering on the website and describing in no more than 1,000 words a dream they have yet to achieve or the area of their lives they would like to improve. A panel will judge the essays on originality (70 percent) and impact on the member’s life (30 precent).
